Agave Convallis, foraged wild, aged 10 years, 48.6% alc./vol., bright and vegetal, with a peppery finish. This mezcal was distilled three times to tame this notoriously difficult agave into a smooth sipper.
Mezcal Exiliado is sustainably produced by Temo Garca, using traditional methods he learned from his father, a legendary maestro mezcalero. The carefully selected agave hearts are wood fired over volcanic rock, stone ground, fermented in pine barrels, and distilled twice in copper at a small palenque in San Dionisio Ocotepec, Oaxaca.
